Favorite Noodle Recipe

Took the pic before we added broth, but I wanted you guys to see the base of my pho bowl!

I keep it very simple (this is one of my lazy day meals): one protein, one veggie, one starch.

I love adding shrimp because I don’t have to plan ahead and I can thaw them under cold water pretty quickly. Pro tip: always cook your shrimp in a yummy sauce before you make the pho. The flavor gets all the way through and it is so good!

In this recipe, I’ll use about 10 stalks of green onion. I love green onion but you can absolutely use less and sub in some broccoli, cilantro, mint, or whatever tickles you!

Today I used Mei Fun noodles from my local Asian grocery. You can use ramen, pho noodles, or rice noodles!
