Dinner recipes

Chicken Parmesan on of my favorite comfort foods when I don’t want to eat out. It was a hit with my little picky eater too.

You will need:

Chicken breast cut in half & pounder out with a mallet or cup. (Whatever you have to thin them out)

Fresh grated Parmesan cheese

Breast crumbs (I use Italian bread crumb)

2 eggs

Seasoning- garlic salt, Italian seasoning and I used some Dan-o Seasoning as well.

Place some pasta of choice to a boil. I Boil as package says. I use thin spaghetti. Use whatever sauce of choice. Could be Parmesan with butter, garlic and olive oil, or pesto or marinara.

I also add some seasoning to doctor it up if it’s jarred.

Pound out chicken thin.

Season meat with your seasoning.

Also, prepare bread crumbs on a plate and add seasoning and some parm cheese in the mix.

Beat two eggs in a bowl.

Then coat egg on seasoned chicken.

Next, bread crumbs to stick to the egg base.

Use a good fry oil of your choice. Depending on how thin you pounded them out. Your cook time will differ.

Mine took about 7 mins each side.

Or you can spray with oil and put in the air fryer. 375 each side or 7-9 mins.

Top food with fresh parmesan cheese and basil.

Can’t go wrong.
