Perfect Marry Me Vegan Coconut Chicken 😋
I love eating mushrooms, and I'm always looking for new ways to eat them. They make great meat substitutes for vegans and vegetarians. This coconut chicken style is definitely my new favorite!
Ingredients 🛒:
• 1lb broccoli
• 1lb king trumpet mushrooms
• ½ red onion, chopped
• 2 cloves garlic, minced
• ½ cup Bachan’s Japanese BBQ Sauce
• 1 can of coconut milk (14oz)
• ¾ cup cornstarch
• 3 tbsp liquid aminos
Directions 👩🍳:
1️⃣ Wash and chop broccoli into bite size pieces.
2️⃣ Chop onions, and mince garlic.
3️⃣ Cut mushrooms into slices, about ¼ inch thick. Sprinkle them with the liquid aminos, and then bread on both sides with cornstarch. Set aside, and allow the coating to set for about 10-15 minutes.
4️⃣ Fry breaded mushrooms over medium heat until golden brown on both sides. Transfer to a pan lined with paper towels to drain excess oil.
5️⃣ Sauté onions until caramelized, and add garlic until fragrant.
6️⃣ Bring a medium pot of water to a boil. Blanch broccoli for 30-60 seconds (make sure it stays green!).
7️⃣ In a large pan or wok, add broccoli, onions, garlic, and mushrooms. Add coconut milk and BBQ sauce and stir well. Bring to a simmer. Taste, and adjust salt and pepper as needed.
8️⃣ Serve over rice and enjoy!
