My favorite 3 ingredient shortbread cookies!
I love a recipe that lets the ingredients speak for themselves, and these buttery rounds are the ultimate treat! With only 3 ingredients, you can make them whenever you want something slightly sweet! Here’s my recipe.
Ingredients 🛒:
• 1 cup butter, softened
• ½ cup powdered sugar, sifted
• 2 cups all purpose flour
Instructions 👩🍳:
1️⃣ Preheat the oven to 350°F (180°C) and line a baking tray with parchment paper.
2️⃣ In a large bowl cream together the soft butter and sugar with an electric mixer on high speed until light and fluffy, about 3 minutes.
3️⃣ Add in the flour and mix until the dough just comes together.
4️⃣ Roll the cookie dough in cling wrap into a long two-by-two-inch log. Place in the fridge for at least 60 minutes, or up to 3 days.
5️⃣ Once the dough is firm, slice the cookies into ½ inch thick rounds. Place each round on your baking tray and bake for 18 – 20 minutes or until just golden.
6️⃣ Allow to cool slightly before transferring to a cooling rack. Once cool the cookies can be stored in an air-tight container for up to 3 days.
Chef’s Tip 💡:
• If you want to enhance the cookies, add in ½ tsp salt, and 1 tsp vanilla extract.
• For a delightful treat, serve these cookies with your favorite tea!

These 3-ingredient shortbread cookies are a classic example of simplicity meeting deliciousness. From my experience, the key to achieving that perfect crumbly texture lies in how you handle the dough. After mixing the butter and powdered sugar until fluffy, be careful not to overwork the dough once you add the flour, as overmixing can lead to tougher cookies. Chilling the dough is an essential step that helps the cookies maintain their shape during baking. You can refrigerate the dough log for up to three days, which makes it easy to bake fresh cookies whenever you want. I often slice the dough into rounds straight from the fridge and bake them right away, enjoying the convenience. Adding a pinch of salt or a teaspoon of vanilla extract, as suggested, can elevate the flavor without complicating the recipe. For a personal twist, sometimes I sprinkle a little coarse sugar on top before baking for added texture and sparkle. For baking, keep an eye on the cookies during the final minutes; baking time can vary slightly depending on your oven. They should be just golden at the edges to ensure a tender center. Once baked, transferring them immediately to a cooling rack prevents sogginess and helps the cookies set properly. Serving these shortbread cookies alongside a warm cup of tea or coffee makes for a delightful afternoon snack. Their subtle sweetness and buttery flavor complement many beverages, making them a versatile treat. Whether you're baking for a special occasion or a simple everyday indulgence, this straightforward recipe never disappoints.
