Zucchini and Sweet Corn Farro with Basil and Spinach Pesto

I just love fresh local zucchini and sweet corn together. I always try to find new fun ways to put them together each summer, so with some fresh basil and the last of the summer veggies on hand, I decided to make a fresh pesto and roasted veggie grain bowl. I tossed fresh zucchini, sweet corn, and chickpeas with basil infused olive oil and Trader Joe's green goddess seasoning* and air fried until cooked through, then served over farro with a dollop of the pesto and some extra fresh basil. Sooo tasty!

Basil and Spinach Pesto

• 1c basil

• 1c spinach

• 2tbsp pine nuts

• 2tbsp vegan parm (can sub nutritional yeast)

• 2tbsp olive oil (I used basil infused)

• 1 clove garlic of 112 large lemon, juiced

•Salt, to taste

Blend, taste, and adjust seasoning. I added a blend of basil and spinach to sneak some extra nutrients, but you can definitely use all basil! Subbing in another nut would be great too - I love using walnuts in my pesto

*If you don't have a Trader Joe's near you but want to recreate the flavors, the seasoning has a mix of minced onion, granulated garlic, dried chives, dried green onion, spinach powder, and dried parsley
