3 Healthy Dinner Recipes Made With Sweet Potatoes

I’m currently in my sweet potato era, they are just so versatile and nutritious, that I literally have starting buying them in bulk, because my fiance and I just plow through them so fast! Here are some of our favorite sweet potato recipes.

What’s your favorite way to cook a sweet potato?

Sweet Potato Curry

Ingredients:

Coconut oil

1 yellow onion (chopped)

1 red bell pepper (chopped)

5 garlic cloves (minced)

1 (1 inch) piece of fresh ginger (grated)

Fresh thyme leaves

1/4 cup Jamaican curry powder

2 cups veggie stock

1 can coconut milk

1 lb sweet potatoes ( peeled & cubed)

fresh cilantro

Directions:

1. In a large Dutch oven add your coconut oil over medium heat until melted. Add the onion and season with salt until starting to crisp a little. Add ginger, garlic, and thyme. Letting this cooking for 2-3 minutes, then add curry powder and 1/4 cup of veggie stock. Cook, while stirring constantly for 3 minutes.

2. Add the remaining stock, coconut milk, and potatoes. Bring to a simmer and stir occasionally for 10 minutes. Lower the heat and continue to cook at a gentle simmer until the potatoes are tender but don’t fall apart. 30-40 minutes.

3. I usually serve with steamed jasmine rice and a piece of salmon. Top with cilantro, and serve with lime wedges.

Sweet Potato Enchiladas:

Ingredients:

2 chicken breasts

1 jar of salsa Verde

1/2 cup chicken stock

Greek yogurt

Lime juice

Fresh cilantro

Shredded cheese

Directions:

1. In a crock pot, add two chicken breasts, a little chicken broth, and 1 jar of salsa verde. Cook on low heat for 6-8 hours.

2. When chicken is cooked, shred. Once your potatoes are cooked and ready, split in half, stuff with chicken, top with cheese and bake for another 10-15 minutes.

3. In a small bowl, make your crema. I didn’t measure anything, but I just did a little Greek yogurt, juice from a lime wedge, and some fresh chopped cilantro. Mix together and drizzle over your finished potato. Sprinkle a little extra cilantro on top and enjoy!

Sweet Potato Hash:

Ingredients:

Two sweet potatoes (cubed)

Half an onion (chopped)

Two garlic cloves (minced)

1/2 cup of quinoa

Salt & pepper

1 tsp paprika

Chicken sausage

Couple handfuls of spinach

Directions:

1. Cube two sweet potatoes and add to a lightly oiled pan on medium heat. Chop half an onion and toss in after potatoes have been cooking for a bite. Mince two cloves of garlic and toss in.

2. In a small pot cook 1/2 cup of dry quinoa according to directions, while the quinoa is cooking, add salt, pepper, paprika, and continue to cook for another 10 minutes or so.

3. When the sweet potatoes are starting to brown, add in sliced chicken sausage. Once sweet potatoes and chicken sausage are brown & a little charred, just about done, are toss in spinach, and let wilt for a few minutes. Mix in quinoa & top with goat cheese or feta crumbles
