Lighter on the Dairy Tres Leches Recipe

This little coconut‑almond tres leches came together in no time, and it’s the dreamiest way to end a perfect taco night. It’s lighter on the dairy, super gentle on the stomach, and still gives you the classic creamy tres leches taste - this one’s a keeper.

Ingredients:

For the cake:

1 large egg

3 tbsp sugar

1 tsp vanilla

3 tbsp unbleached flour

1/4 tsp baking powder

Pinch of salt

For the Tres Leches:

1/3 cup almond milk

1/4 cup coconut milk

2 tbsp sweetened condensed milk

Pinch of cinnamon

Whipped cream for topping

Directions:

1. Heat oven to 350.

2. In a stand mixer, or handheld mixer. Mix sugar and egg together, until it becomes pale and fluffy.

3. Add vanilla, fold in the flour, baking powder, and salt.

4. Pour in a small pan, ramekins, or mini loaf pan.

5. Bake for 12-15 minutes. While baking, whisk together the tres leches mixture.

6. Let cake cool for a few minutes, then use a fork to gently poke holes all over.

7. Pour tres leches mixture over, cover with plastic wrap and let sit in refrigerator for at least an hour.

8. Spread whipped cream on top, and sprinkle with additional cinnamon. Enjoy!
