Tonight I used what I had and this soup turned out pretty good. Rotisserie chicken, onion, red pepper, carrots, sweet potato, seasoned with Thyme, Oregano, minced garlic, bay leaf, salt, pepper, and cayenne pepper to cut down on some of the sweetness. Literally threw this together without a plan. For seasoning I used chipotle seasoning, black garlic, paprika, parsley, cumin, salt, and pepper.
