Easy recipe for lazy people pt 17: "Minestrone" Pasta

I eat this everytime I have left over tomato pasta sauce.

Ingredients:

- Tomato pasta sauce

- Pasta

- Tuna / Chicken

- Any veggies, here I have carrot, celery and pumpkin

- (Optional) Sugar, pepper, herbs, parmesan cheese

Steps:

1. Boil the celery first as it takes the longest to cook, for about 5mins.

2. Add the rest of your veggies and pasta. Boil for another 15mins.

3. Add tuna and tomato sauce, about 3 table spoons. Season and taste.

Super simple and just need to wash 1 pot. Eat well. Be well. 🍅

... Read moreIf you often find yourself with leftover tomato pasta sauce, this minestrone pasta recipe is a fantastic way to transform those leftovers into a hearty meal. What I love most about this recipe is its flexibility—using whatever vegetables you have on hand like carrot, celery, or pumpkin makes it very adaptable. Celery is boiled first to ensure it softens properly, which enhances the overall texture and flavor of the dish. Adding protein such as tuna or chicken not only boosts nutrition but also complements the tomato sauce beautifully. Tuna offers a light and slightly briny flavor, while chicken tends to be more neutral and comforting. For seasoning, simple pantry staples like sugar, pepper, and herbs can balance acidity and add depth. I often finish with a sprinkle of parmesan cheese to bring a savory, creamy note. Another great advantage is the ease of cleanup—cooking everything in one pot means less mess and save time in the kitchen. It’s an ideal dish for busy weeknights or when you want a nutritious meal without complexity. With just a few common ingredients and minimal effort, this minestrone pasta is a practical way to enjoy homemade comfort food any day of the week. For best results, use a sturdy pasta shape like rigate penne, as mentioned in the OCR content, which holds sauce well. Feel free to experiment with different vegetables or proteins according to your preference and what’s available. This recipe proves that simple, thoughtful cooking can turn scraps into something truly satisfying and wholesome.
