Seafood Chowder

Ingredients:

For the Base:

* 4 tbsp butter

* 1 medium onion, finely chopped

* 2 garlic cloves, minced

* 2 celery stalks, diced

* 2 medium carrots, diced

* 2 medium potatoes, peeled and cubed

* 1/4 cup all-purpose flour

* 4 cups seafood stock (or chicken broth)

* 2 bay leaves

* 1 tsp thyme

* 1/2 tsp smoked paprika (optional)

* Salt and pepper, to taste

For the Seafood:

* 1 cup heavy cream or half-and-half

* 1/2 lb white fish (cod or halibut), bite-size pieces

* 1/2 lb shrimp, peeled and deveined

* 1/2 lb scallops (optional)

* 1/2 lb clams or mussels, in shells, scrubbed

* 1/2 cup cooked bacon or pancetta, for topping

* Fresh parsley, for garnish

Instructions:

1. Melt butter in a large pot over medium heat; sauté onion, garlic, celery, and carrots 5–7 min until softened.

2. Stir in flour, cook 1–2 min to form a roux.

3. Gradually whisk in seafood stock; add potatoes, bay leaves, thyme, paprika, salt, and pepper.

4. Cover and simmer 15–20 min until potatoes are tender.

5. Reduce heat to low; add fish, shrimp, scallops, and shellfish. Simmer 5–7 min until seafood is cooked and clams/mussels open (discard closed shells).

6. Stir in cream; adjust seasoning.

7. Serve with bacon/pancetta and parsley.
