Homemade Keto Creamy Tuscan Shrimp is a rich, flavorful, and low-carb dish that comes together in just minutes.
🛒 Ingredients
1 lb (450 g) large shrimp, peeled and deveined
2 tablespoons butter
3 cloves garlic, minced
1 cup heavy cream
½ cup grated Parmesan cheese
½ cup sun-dried tomatoes, chopped
1 cup fresh spinach
1 teaspoon Italian seasoning
Salt and black pepper to taste
1 tablespoon olive oil
Fresh parsley for garnish (optional)
👨🍳 Instructions
Prepare the shrimp
Pat the shrimp dry with paper towels and season lightly with salt and black pepper.
Cook the shrimp
Heat olive oil and 1 tablespoon butter in a large skillet over medium heat. Add the shrimp and cook for about 1–2 minutes per side until pink and cooked through. Remove from the skillet and set aside.
Make the creamy sauce
In the same skillet, add the remaining butter and minced garlic. Sauté for about 30 seconds until fragrant.
Add cream and cheese
Pour in the heavy cream and bring it to a gentle simmer. Stir in the Parmesan cheese and Italian seasoning. Let the sauce cook for 2–3 minutes until slightly thickened.
Add vegetables
Stir in the chopped sun-dried tomatoes and fresh spinach. Cook for another 1–2 minutes until the spinach wilts.
Combine everything
Return the cooked shrimp to the skillet and toss to coat them in the creamy Tuscan sauce. Let everything heat together for about 1 minute.
Serve
Garnish with fresh parsley if desired and serve warm. Enjoy it alone or with zucchini noodles or cauliflower rice for a complete keto meal.
