Cambodian-Style Stir-Fried Corn Kernels

Ingredients:

* 5 cups frozen corn kernels

* 2 stalks green onion

* 1/4 cup dried shrimp (soaked for 1 minute)

* 1/2 cup coconut milk

* 1/4 cup coconut oil for cooking

* 1/2 teaspoon salt

* 1 tablespoon sugar

* 1/2 teaspoon black pepper

* 1 teaspoon fish sauce

Stovetop Method:

1. In a skillet, add coconut oil and sauté the green onion for 30 seconds. Remove the green onion from the skillet.

2. In the same skillet, add the dried shrimp and corn kernels. Stir-fry until the corn kernels are nicely toasted.

3. Add salt, sugar, black pepper, and coconut milk to the skillet. Toss the ingredients for a few minutes until fragrant.

4. Return the green onion to the skillet and toss to combine. The stir-fried corn kernels are now ready to serve.
