Flourless Chocolate Raspberry Cake (6 in., gluten-free)

Ingredients

Cake Batter

• ⅔ cup semisweet or bittersweet chocolate chips (113g)

• 5 tbsp unsalted butter, room temperature (~75g)

• ½ cup granulated sugar (100g) minus 1 tbsp

• ⅙ tsp salt

• 1 tsp espresso powder

• 1 tsp vanilla extract

• 2 large eggs

• ⅓ cup + 1 tbsp Dutch‑process cocoa powder (35g)

Raspberry Chocolate Ganache

• ⅔ cup Raspberry Dark Chocolate, chopped(113g) (I used @endangeredspecieschocolate)

• ⅓ cup + 1 tbsp milk (90ml; oat milk works)

• Freeze‑dried raspberry powder, to sprinkle on top

Instructions

1. Preheat oven to 375°F. Grease a 6‑inch round pan, line with parchment.

2. Melt together chocolate and butter until smooth either using the microwave or double boiler method; transfer to a mixing bowl.

3. Stir in sugar, salt, espresso powder, and vanilla.

4. Add eggs and mix until smooth. Then stir in cocoa powder just until combined.

5. Pour into the pan and bake 18–22 minutes, until just set.

6. Cool 5 minutes, loosen edges, invert onto a plate, and cool completely.

7. While cooling, make the ganache by heating the milk until steaming. And then pouring it over your raspberry chocolate. Stir smooth- mine had raspberry pieces!

9. Pour glaze over the cooled cake and let set.
