Carne Guisada

2.5 to 3 lbs beef stew meat

1 Tbsp oil

1 medium yellow onion

½ green bell pepper

½ red bell pepper

3-4 garlic cloves

1 tsp whole cumin

2 roma tomatoes

1 can tomato sauce

3 Tbsp flour

Salt and pepper to taste

Instructions:

1. Add stew meat into a Dutch oven or other

large pot with oil and brown over mediumhigh heat. Allow the meat to release all of its

juices and continue to cook until the beef has

browned.

2. Meanwhile, dice bell peppers and onion. Add

to the pot of beef and stir to allow vegetables

to soften.

3. Add enough water to barely cover the meat

and season with salt and pepper. Cover and

simmer for about 20 minutes.

4. Meanwhile, grind garlic and cumin in a

molcajete to form a paste. Thin the paste

with a couple of tablespoons of water and #carne

add the slurry into the pot.

5. Dice the tomatoes and add to the pot along

with the tomato sauce. Cover and continue to

simmer another 20 minutes or until the meat

is tender.

6. Mix together flour with 3 tablespoons of water

until smooth and add to the pot. Stir until the

gravy has thickened, then remove from heat.
