The classic Piña Colada
🌴The ultimate of all the summer drinks. Add an umbrella and you are instantly transported to a tropical paradise. This beverage uses cream of coconut and pineapple to transport you back to the islsnds.
Here is the basic recipe:
Ingredients:
🥥* 2 ounces (60 ml) white rum (light rum is traditional, but some like to mix with a little dark rum for more depth)
* 1 ounce (30 ml) cream of coconut (like Coco Lopez – this is different from coconut milk or coconut cream)
* 6 ounces (180 ml) pineapple juice (fresh is best, but canned works too)
* 1-1.5 cups crushed ice (or frozen pineapple chunks for a thicker, less diluted drink)
Optional additions:
* 1 ounce (30 ml) heavy cream (for extra richness)
* 1/2 ounce (15 ml) fresh lime juice (to balance the sweetness)
* Simple syrup to taste, if you prefer it sweeter
🍍Garnish:
* Pineapple wedge or slice
* Maraschino cherry
* Pineapple fronds (optional)
Instructions:
* Combine ingredients: In a blender, combine the rum, cream of coconut, pineapple juice, and crushed ice (or frozen pineapple).
* Blend: Blend until smooth and frosty. If using frozen pineapple instead of ice, you might need less ice for a thicker consistency.
* Taste and adjust: Taste and adjust sweetness or tartness with more pineapple juice, lime juice, or simple syrup as desired.
* Pour and serve: Pour into a chilled glass (a Poco Grande glass is traditional).
* Garnish: Garnish with a pineapple wedge or slice and a maraschino cherry.
