I love using Shin ramen Specifically shin black. The both broth makes everything so silky. Soft boiled eggs. Boil for 7 minutes and immediately cover in cold water. I’ve added fried tofu , just cover in cornstarch and fry each side for 2-3 minutes. I’ve added mandu 🥟 Pork belly Green
