🌈 Rainbow Rolls 🌈

You will need:

1 package rice paper

1 package rice vermicelli noodles

1 purple cabbage

1 red bell pepper

1 yellow bell pepper

1 large carrot (julienned)

1 cucumber, I used Persian

1 bunch of green onions, I used green part only

1 head of lettuce, I used green leaf lettuce but butter lettuce would work great here!

1 bunch cilantro

1 bundle of mint (optional)

• Prepare all vegetables. I sliced/julienned all of mine thin, aside from the lettuce leaves (you can leave these whole, or half them if necessary), and the mint and cilantro (I just pulled all of the leaves from stems).

•Prepare rice noodles as directed on package (I used Three Ladies Brand fine rice vermicelli)

•Once fillings are prepared, you can start assembly. Get your rice paper wet. The rougher side should be facing up. I laid my rice noodles down first, then lettuce, then sliced veggies, and finished roll with cilantro and mint. Fold corners in, and roll away from yourself, as tight as possible (kind of like you're rolling a burrito). 😉 Continue process until you have as many rolls as you'd like!

I served mine with 2 different homemade peanut sauces, Momofuku chili crunch, and Nuoc Cham (a Vietnamese dipping sauce).
