A mi me a funcionado que si lo necesito al día siguiente temprano lo hago en la noche y lo dejo reposar a temperatura ambiente y desmoldo, así el caramelo aún no está duro, ya que si lo refrigeras de igual manera yo lo que hago es calentar un poco el molde en la estufa para que el caramelo empiece a soltarse y listo así sale fácil
