Banana Split Rum Swirl Pops
Ingredients:
- 2 ripe bananas
- 1 cup coconut milk
- 1/2 cup light rum
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup chopped walnuts
- 1/4 cup chocolate chips
- 1/4 cup maraschino cherries, halved
- 1/4 cup whipped cream (optional for serving)
Directions:
1. Begin by peeling the two ripe bananas and placing them into a blender or food processor.
2. Add 1 cup of coconut milk, 1/2 cup of light rum, 1/4 cup of honey or maple syrup, and 1 teaspoon of vanilla extract to the blender with the bananas.
3. Blend the mixture on high speed until it is completely smooth and creamy, ensuring there are no lumps of banana remaining in the mixture.
4. After blending, taste the mixture to check the sweetness. If you prefer it sweeter, add a little more honey or maple syrup, blend again briefly to incorporate.
5. Pour the banana mixture into a mixing bowl. Then, gently stir in 1/4 cup of chopped walnuts, 1/4 cup of chocolate chips, and 1/4 cup of halved maraschino cherries until they are evenly distributed throughout the mixture.
6. Prepare your popsicle molds by ensuring they are clean and dry. This step is crucial for easy removal of the pops later.
7. Carefully fill each popsicle mold with the banana mixture, making sure to leave a little space at the top of each mold for the mixture to expand as it freezes.
8. Once the molds are filled, insert popsicle sticks into the center of each mold, ensuring they are secure and straight.
9. Place the filled molds in the freezer and allow them to freeze for at least 4 to 6 hours, or until they are completely solid and firm to the touch.
10. After the pops have frozen solid, remove them from the molds by running warm water over the outside of the molds for a few seconds. This will help loosen them for easy removal.
