Yesterday I was craving some pollo tropical food. Went there spend $32 and some change. Btw I bought food for me n my husband n my 8 picky eater . Today husband wanted same food again so I told myself, that I rather make it instead of spending another $32 something dollar of food. Specially I already have some of the ingredients at home. So I did save me $32 n we have leftovers for tomorrow.
-Oven baked chicken, hubby wanted brown rice ( fyi first time cooking brown rice n I hated it. It takes forever to cook) and I made white rice for me n my son, with sautéed loose corn seasoning n with red bell pepper, seasoning stew beans 🫘. Honestly it’s was way better than pollo tropical n save us some money.

If you're looking to elevate your homemade Pollo Tropical feast, mastering that rice is a game-changer. I've experimented quite a bit to get that authentic taste and texture, and I think I've finally nailed a simple recipe that gets pretty close. The key is using a good quality medium-grain rice and just the right amount of turmeric or annatto for that vibrant yellow color – no artificial stuff needed! Here’s my go-to for a homemade Pollo Tropical-style Yellow Rice with Peas and Carrots: Ingredients: 2 cups medium-grain white rice (like jasmine or calrose) 3 cups chicken broth (or water + bouillon) 1 tablespoon olive oil 1/2 cup finely diced onion 2 cloves garlic, minced 1/2 teaspoon turmeric powder (or annatto powder for a more orange-yellow) 1/2 teaspoon salt (adjust to taste, especially if using salted broth) 1/4 teaspoon black pepper 1/2 cup frozen peas and carrots blend Instructions: Rinse the Rice: First, rinse your rice under cold water until the water runs clear. This removes excess starch, which helps achieve that fluffy, separate grain texture. Sauté Aromatics: In a medium pot with a tight-fitting lid, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 3-5 minutes. Stir in the minced garlic, turmeric/annatto, salt, and pepper, and cook for another minute until fragrant. Add Rice and Liquid: Add the rinsed rice to the pot and stir it to coat all the grains with the oil and spices. Pour in the chicken broth. Bring the mixture to a boil. Let the rice sit, covered, for another 5-10 minutes. The residual heat will cook the vegetables and finish steaming the rice. Fluff and Serve: Finally, remove the lid and fluff the rice with a fork. You'll get beautifully soft, flavorful grains with perfectly tender (not crunchy!) peas and carrots, just like your favorite tropical spot. This yellow rice pairs incredibly well with oven-baked chicken, and when you add those seasoned stew beans and sautéed corn, you’ve got a full, satisfying meal that truly rivals the takeout version.
