If you know you know( Haitian mac & cheese)
First you need pasta. You can used a different pasta , such as penne or rigatoni etc if you like.
2-A whole or half red pepper, green pepper 🫑. Depending on how much you like veggies. I put a little tomato 🍅 also
3- onions 🧅 ( I use a whole onion cause I like onion)
4- ham or ground beef, ground turkey which even. (I used ham this time).
5 - I used 3 cheese and laughing cow cheese/ cream cheese and Gouda n harvati cheese 🫕. N carnation milk a can.
First cooked the ground beef if that what you choose with you favorite seasoning. N add the veggies in there n leave a little bit of extra veggies on the side. After cooking it. Add the milk doesn’t have to be the carnation but I prefer because it brings so much texture n flavor to it. Then add the 3 cheese leaves some for the topping n add the laughing cow cheese or cream cheese in the cause. N some of the havarti n the some of the Gouda cheese. After making that sauce. Let it simmer down. Your hot water should be boiling in right then and add your pasta. After pasta finished cooking . Drained it well put the pasta in your baking pan add mayo mix it in the pasta n add a little laughing cow cheese or cream cheese and add the sauce you made in there. Afterwards add the remaining of the veggies n mix and top off with the rest of all the cheeses n baked n enjoy 😊

In my experience, Haitian mac & cheese is not just a dish but a real comfort food that brings people together, especially during celebrations or family gatherings. What makes this recipe exceptional is the unique cheese blend – combining Gouda, Havarti, and cream cheese creates a creamy, velvety sauce that's richer than your traditional mac & cheese. Using Carnation milk adds a subtle depth to the sauce, enhancing its texture and flavor. One tip I found helpful is to cook the meat first with your favorite seasonings and then incorporate the sautéed veggies like red and green peppers, onions, and a touch of tomato to add freshness and balance. Mixing mayo into the drained pasta before adding the sauce might sound unusual, but it actually helps the cheese sauce cling better to each macaroni piece, resulting in a luscious bite. You can customize the recipe by choosing different meats such as ground turkey or ham, or by swapping pasta types like penne or rigatoni for variety. Don’t forget to reserve some cheese to top the casserole before baking; it creates a beautiful golden crust that's as tasty as it looks. This dish is a perfect example of how Haitian cuisine creatively blends flavors and textures, making it a must-try for anyone looking to explore Caribbean comfort food.
