Blueberry Galette Recipe
Ingredients
2lbs blueberries
1/4 cup sugar
2 TBS cornstarch
1 tsp lavender
Juice of 1 lemon
Zest of 1 lemon
1 egg yolk beaten
Crust Ingredients:
1-1/2 cups all purpose flour
1/2 tsp salt
1-1/2 sticks cold butter (cubed)
1 egg yolk
3 TBS cold water
Make the Pie Crust:
In a medium bowl, whisk salt and flour together in a bowl.
Cut butter into half inch cubes and toss in flour.
Using your hands, crumble the butter into the flour creating pea size pieces in the flour.
Whisk the water and the egg yolk together in a small bowl and add to the flour and butter mixture. Mix all together with your hands until just combined.
Form into a disc and wrap in parchment paper. Refrigerate for 30 mins.
Remove from refrigerator and roll dough into a square. Fold in half and fold in half again. Roll dough again and repeat folds.
Tightly wrap dough in parchment and roll out any air bubbles. Refrigerate for 1 hour before using.
Make the Galette:
Add blueberries, lavender, lemon juice, sugar and cornstarch to a medium bowl and mix together.
Roll out dough and place onto a lined baking sheet.
Spoon blueberry mixture in the center of dough
Fold edges of the dough over the blueberries and bush the edges with beaten egg. *optional, sprinkle edges with sugar
Bake on 400° for 30-35 minutes or until edges are golden brown.
Allow to cool, top with lemon zest and serve with your favorite vanilla ice cream!
