How to make
① Wash the potatoes clean

自宅でザクザク食感のフライド ポテトを作るポイントは、衣に強力粉と片栗粉、そしてベーキングパウダーを加えることです。これが衣をしっかりカリッと仕上げ、中はホクホクにしてくれます。 また、炭酸水を使うことで衣が軽くサクサクに。加熱時間も大切で、初めに160度でじっくり3分揚げてから一度冷まし、最後に180度で仕上げ揚げすると中まで火が通りやすく、食感のメリハリが出せます。 新じゃがを使う場合は、火の通りがよくなるよう皮にフォークで穴をあけてからレンジで加熱。つまようじがすっと刺さるくらいまで加熱すると、切った時に崩れにくくなり仕上がりがキレイになりますよ。 付け合わせのソースはケチャップをベースにウスターソース、はちみつ、にんにく、パプリカパウダー、ブラックペッパーを混ぜたオリジナル。甘みと酸味、スパイスのバランスが抜群で、ポテトとの相性もバッチリです。 私も何度も試作を重ねたこのレシピは、普通のフライドポテトとは一味違う食感と味わいを楽しめます。おうちカフェやおもてなしにも喜ばれる一品ですので、ぜひ挑戦してみてください!
