I've personally found that this 3-ingredient potato casserole is a game changer when I need a comforting side dish without spending hours in the kitchen. Using just peeled, thinly sliced potatoes, heavy cream, and powdered vegetable stock, this recipe blends simplicity with rich flavor. One trick I've learned is to slice the potatoes as evenly and thin as possible, which helps them cook thoroughly and develop that lovely golden crust on top. When baking at 400°F, I usually cover the dish with foil for the first 30 minutes to lock in moisture, then remove it for the last 10 minutes to get a nicely browned finish. The combination of heavy cream and vegetable stock creates a savory, velvety sauce that thickens beautifully as the casserole rests after baking. For some extra flavor, I've sometimes sprinkled a bit of paprika or fresh herbs like thyme or rosemary before baking. It’s also great to add a sprinkle of shredded cheese on top during the last few minutes to melt and add a golden cheesy crust. This recipe is perfect for busy weeknights, potlucks, or anytime you want a fuss-free, satisfying dish. Plus, being a vegetarian-friendly recipe with just three simple ingredients, it’s a versatile addition to any meal plan.
