These are amazing . You can make it to a lil bread loaf also Plantain English Muffins Ingredients * Nut-free Version (serves 2-3) * 1 large ripe plantain (about 1 1/3 C chopped) * 1 egg * 2 Tbsp olive oil or melted coconut oil * 2 Tbsp coconut flour * pinch of salt * * Egg-free & Nut-free (serves 3-4) * 1 large ripe plantain (about 1 1/3 cup chopped) * 2 Tbsp olive oil or melted coconut oil * ¼ C+1 Tbsp tapioca flour or arrowroot starch/flour * 2 Tbsp coconut flour * 1 tsp gelatin * 1/2 tsp baking soda * 1 tsp apple cider vinegar or white wine vinegar Instructions 1. Preheat your oven to 375 F. Grease 2-4 (depending on which variation you choose) ramekins, mason jars or oven safe mugs. If you don’t have either of those, you can use a muffin tin but they won’t be English muffins anymore. 2. Roughly chop the plantains, and place in a food processor or blender with the remaining ingredients. Blend until smooth and creamy. 3. Pour batter evenly amongst the greased ramekins. Bake for 15-18 minutes. 4. Let cool slightly. Serve sliced in half and toasted, or freeze for later use. Notes When following the recipe, select either the nut-free version ingredient list or the nut-free, egg-free ingredient list. here's an amazing jam to put on it or any kind of bread Ingredients * 1 cup fresh Cranberries, frozen * 3 Tbsp Pure Maple Syrup * 1/3 cup Pumpkin Puree * 1/2 Tbsp ground Cinnamon Process 1. heat cranberries and honey in a small sauce pan over medium-low heat for about 7-10 minutes, or until it becomes a sauce. Stir continuously. 2. Once the cranberries are fully thawed and become a sauce, add pumpkin and cinnamon. Stir for another 5 minutes on medium-low heat. 3. Take off of heat and let cool.
