This Is NOT Japanese Cheesecake (I still don’t get that name). She is soft, honeyed, coffee syrup drizzled, and very much my own. I finally jumped on this trend and made the cheesecake everyone is making - and then immediately took it somewhere else 🤭
Whipped cottage cheese instead of cream cheese. Honey, a little vanilla, a pinch of sea salt, cheesecake Jell-O powder just because, and simple mills honey-cinnamon cookies (less cals than Biscoff), and my homemade coffee syrup.
