Turkey and Mushroom Meatloaf!

Weeknight dinners just got a lot easier with my Turkey and Mushroom Meatloaf! 🦃

This turkey and mushroom meatloaf is much healthier than your traditional meatloaf, and it’s packed with delicious sautéed mushrooms for that extra umami taste! 🍄 🍄‍🟫

You could make this meatloaf ahead of time or the day of - either way, it’ll be so worth it!

Ingredients 🛒

• 1 lb ground turkey

• 1 onion, diced

• 8 oz cremini mushrooms, chopped

• 3 garlic cloves, minced

• 1 tbsp extra virgin olive oil

• 1 tsp dried thyme

• 1 tbsp Worcestershire sauce

• 1/3 cup chicken stock

• 2 eggs, beaten

• 1 cup panko crumbs

• 4 tbsp ketchup

• Salt and black pepper, to taste

Directions ✍️

• Preheat oven to 400F.

• Into a sauté pan, add in the extra virgin olive oil on medium-heat. Add the onions and cook for 5 minutes. Add in the garlic, mushrooms, thyme, and season with salt and pepper. Cook until mushrooms release all of their liquid.

• Add in the Worcestershire sauce, chicken stock, and tomato paste.

• Into a large mixing bowl add in the ground turkey along with the eggs, breadcrumbs, and cooked vegetables. Mix together with salt and pepper. Form meatloaf into a rectangle and place onto a baking sheet.

• Spread ketchup over the top of the meatloaf and bake for 50 minutes.

• Allow to rest for 5 minutes before slicing and enjoying!
