3 Tbsp Sushi Vinegar or Aji-Mirin

4 Tbsp Japanese mayo or kewpie mayo

1 1/2 Tbsp Sriracha (Optional)

2 Ripe Avocado Sliced

4 Mini Cucumber (Persian) Sliced

Masago (Optional/for topping)

Speaking of 'what's in a California roll,' let's chat about a few key elements. The 'meat' in a California roll is typically imitation crab, which is made from surimi – a processed fish paste, usually pollock.
