Lunch with Kelly + Chris 🌮🔔 #tacobell #cantinachicken #avocadoranch #lunchtime #chalupa
Hey everyone! We all love a good, quick taco fix, right? My recent Taco Bell run for their Cantina Chicken and a Chalupa hit the spot perfectly for a fast lunch. But sometimes, I’m looking for something that offers a similar quick-and-easy vibe but with a homemade touch, especially when I'm trying to save a little money or just want to control my ingredients. That’s where the idea of a 'taco lunchable' comes in handy! I’ve been experimenting with creating my own DIY taco lunchables for busy weekdays, and it's surprisingly simple and super satisfying. Think of it as a deconstructed taco kit you can assemble in minutes, whether you're at home, the office, or even out and about. It's truly a game-changer for quick, delicious meals. The key to a great taco lunchable is smart prep. Here’s how I usually put mine together: First, the protein: I often cook up a batch of seasoned ground beef, shredded chicken, or even black beans and corn at the start of the week. This makes assembly a breeze. For chicken, I might shred a rotisserie chicken or quickly sauté some bite-sized pieces with taco seasoning. If I'm doing a vegetarian version, seasoned black beans are fantastic and really hold up well for a few days in the fridge. Next, the shells: Mini tortillas – either soft flour or corn – are perfect for these lunchables. You can also use hard taco shells, but I find soft tortillas more versatile for packing. I usually pack them separately so they don't get soggy. If you like a little crisp, you can quickly warm them up in a pan or microwave before eating. Then, the toppings! This is where you can get really creative and make it your own. I usually include: Shredded lettuce: Always a must for that fresh crunch. Shredded cheese: Colby Jack or a Mexican blend is my go-to. Salsa: A small container of your favorite chunky or mild salsa adds a burst of flavor. Sour cream or Greek yogurt: A dollop makes it creamy. Sometimes I mix in a little lime juice and cilantro for extra zest. Avocado Ranch: Inspired by my Taco Bell experience, I often make a quick homemade version or buy a good quality one. It adds so much flavor and creaminess! If you're feeling adventurous, a simple guacamole is also amazing, just make sure to add a little lime to prevent browning. Optional extras: Diced tomatoes, sliced jalapeños (if you like heat!), chopped onions, or even some corn kernels can elevate your lunchable. Packing these up is pretty straightforward. I use a bento-style lunch container with separate compartments to keep everything fresh and prevent sogginess. I usually put the protein in one, cheese and lettuce in another, and the sauces in small, leak-proof containers. When lunchtime rolls around, it’s just a matter of assembling your mini tacos! It’s like having your own personal taco bar wherever you are. Not only is this a super quick and easy lunch, but it’s also often more cost-effective than eating out every day, and you have full control over the ingredients. It’s a great way to use up leftovers too. So, while I'll always crave that classic Taco Bell Cantina Chicken, having a homemade taco lunchable prepped in the fridge is my secret weapon for delicious, hassle-free meals throughout the week!
