Busy Girl Breakfast Hack

These are honestly the easiest muffins I’ve ever made — I just dumped everything in one bowl, gave it a quick mix, and baked. No fancy steps. No fluff. Just a macro-friendly recipe that actually works.

I used Kodiak Chocolate Chip pancake mix and swapped in Clean Simple Eats cake batter protein powder instead of vanilla — and WOW. So good. They’re soft like pancakes, shaped like muffins, and perfect for grab-and-go mornings or late-night snacks that don’t totally derail your day.

Makes 12 muffins

🧁 ~93 calories | 9.4g protein | 10.8g carbs | 1.6g fat

✨ What I used:

– 2 cups Kodiak Chocolate Chip pancake mix

– 1 cup Fairlife milk

– 1 scoop CSE cake batter protein

– ½ cup liquid egg whites

– 1 whole egg

– 1 tsp vanilla extract

– (Optional: 1 tbsp maple syrup or honey — I skipped it)

Baked at 350°F for ~16 minutes. Let them cool, store in the fridge, and enjoy all week!

They’re not crazy high in protein, but for a pancake muffin? The macros are 💯 and they’re way better than any “healthy” snack bar I’ve bought.
