I’m not gonna yie this was so good, that I might make it again next week 😋😆
This only took 30 mins to cook and prep, and this is what stops me from constantly skipping breakfast 😅 lbvs. On my busy or lazy days (so pretty much everyday) if there’s nothing prepped or convenient then I’ll just skip breakfast all together. It’s such a bad habit of mine and it interferes with me hitting my protein and calorie goals.

It’s not just about staying full; a protein-rich start helps kickstart your metabolism and keeps those pesky mid-morning cravings at bay, making it easier to stick to a healthy eating plan throughout the day. That's exactly why I've become obsessed with smart meal prep! Beyond the amazing, quick baked breakfast casserole with turkey sausage, egg whites, baby spinach, and diced potatoes that I shared, there are so many fantastic ways to create delicious, healthy high-protein breakfast preps. The key is to find what works best for your taste buds and schedule. What I’ve learned is to always think about my protein source first, then add in healthy carbs and plenty of veggies. For example, lean protein like ground turkey sausage is incredibly versatile and can be cooked in advance, ready to be added to eggs or wraps. Liquid egg whites are another staple in my kitchen for boosting protein without much effort. When it comes to veggies, baby spinach wilts down easily and adds nutrients to any egg dish. You could also roast a big batch of bell peppers, onions, or even mushrooms to mix into your breakfast. And healthy carbs are crucial for sustained energy! Diced potatoes or sweet potatoes can be roasted or boiled ahead of time and portioned out with your protein. Quinoa is another excellent option if you prefer grains. Here are a few other high-protein breakfast ideas I’ve incorporated into my rotation to keep things fresh and exciting: Overnight Oats with Protein Powder: Mix rolled oats, a scoop of your favorite protein powder, chia seeds, and milk (dairy or non-dairy) in a jar the night before. Top with fresh berries or a sprinkle of nuts in the morning for added nutrients and flavor. It’s incredibly quick and satisfying. Greek Yogurt Parfaits: Layer high-protein Greek yogurt with a moderate amount of low-sugar granola and fresh fruit like blueberries or sliced peaches. Greek yogurt is a fantastic source of protein, and it’s so versatile.
