Leftover pork roast → carnitas-style egg cups 😍

High-protein, meal-prepped, and so easy it’s basically breakfast on autopilot.

Here’s what I used:

🥚 8 eggs

🧀 ½ cup cottage cheese + ½ cup shredded parmesan

🐖 1½ cups shredded pork roast (crisped up like carnitas)

onion powder, cumin, and garlic salt to taste

Blend the eggs, cottage cheese, and spices, pour over the pork in greased mini muffin tins, sprinkle cheese on top, and bake at 375° for 20 min.

Last week I made them with turkey pastrami and pepperoni — also insanely good.

We serve them with hot sauce and a dollop of sour cream or Greek yogurt, plus sauerkraut or slaw and sourdough toast. A delicious, high-protein, gut-healthy breakfast with zero morning effort. 💪✨
