Ingredients:
▪️1 lb lean ground beef
▪️1 lb ziti pasta
▪️Seasonings: salt, black pepper, garlic powder, onion powder, crushed red pepper flakes, Italian seasoning
▪️2 zucchini (diced)
▪️1/2 yellow onion (diced)
▪️1 green bell pepper (diced)
▪️6 garlic cloves (minced)
▪️2 tbsp tomato paste
▪️28 oz crushed tomatoes
▪️15 oz diced tomatoes
▪️1.5 cups low fat cottage cheese
▪️4 oz reduced fat mozzarella cheese
Directions:
▪️Bowl pasta according to box instructions.
▪️Brown ground beef and season with seasonings listed.
▪️Add tomato paste and cook for a few minutes before adding onions, peppers, and zucchini.
▪️Cook until veggies have softened, then add minced garlic and cook until fragrant.
▪️Add diced tomatoes, crushed tomatoes, cottage cheese, and seasonings. Simmer the sauce for about 20 minutes.
▪️Add pasta to sauce and dump into a large baking dish.
▪️Bake at 375 degrees for 15-20 minutes to melt cheese. Enjoy!
