Ingredients
For the Nuggets:
• 6-8chicken tenders, cut into 1-inch cubes
• 2 1/4 cups milk
• 1 cup pickle juice
• 3 eggs
• 1 1/2 cups flour
• 1/4 cup powdered sugar
• 1 1/2 tsp salt
• 3 tsp pepper
• Peanut oil for frying
For the Cobb Salad Base:
• 6 cups chopped romaine or green leaf lettuce
• 1 1/2 cups grape tomatoes
• 4 boiled eggs, peeled and chopped
• 1 cup shredded Monterey Jack or cheddar cheese
• 6 strips cooked bacon, crumbled
• 1/2 cup roasted corn (optional)
Instructions
1. Marinate the Chicken:
In a bowl, whisk together the milk, pickle juice, and eggs. Add cubed chicken and marinate in the fridge for 2–4 hours.
2. Coat the Chicken:
Mix flour, powdered sugar, salt, and pepper in a ziplock bag or bowl. Remove chicken from marinade and toss in the flour mixture to coat.
3. Fry the Chicken:
Heat about 1.5 inches of peanut oil in a skillet over medium heat (heat level 6–7). Test with flour — it should sizzle, not pop. Fry nuggets 3–4 minutes per side until golden brown and fully cooked. Drain on paper towels.
4.Assemble the Cobb Salad:
