Crispy Chicken Caesar Salad
Ingredients:
• 2 chicken breasts
• 2 cup Italian breadcrumbs
• ¼ cup grated Parmesan
• 3 egg, beaten
• Salt & pepper
• olive oil (for pan)
• 1 -2 small head romaine lettuce, chopped
• ¼ cup Caesar dressing
• Extra Parmesan, shaved
• Croutons (optional)
• Lemon wedges (optional)
Homemade Caesar Dressing
Ingredients:
• ½ cup mayo
• 1 clove garlic, minced
• 2 anchovy fillets (or 1 tsp anchovy paste)
• 2 tsp Dijon mustard
• 2 tsp Worcestershire sauce
• 2 tbsp freshly squeezed lemon juice
• ¼ cup grated Parmesan
• Salt & pepper, to taste
Instructions:
1. In a bowl, mash anchovies and garlic into a paste.
2. Whisk in mayo, Dijon, Worcestershire, lemon juice, and Parmesan.
3. Season with salt & pepper. Taste and adjust lemon or Parmesan if needed.
4. Keep chilled until ready to use.
Salad Instructions:
1. Prep the chicken: Pound chicken breasts to even thickness. Season with salt, pepper, garlic powder, and paprika.
2. Coat: Dip chicken in beaten egg, then press into panko mixed with Parmesan.
3. Cook: Heat olive oil in a pan over medium heat. Cook chicken 4–5 min per side until golden & crispy. Let rest 5 min, then slice.
4. Assemble: Toss lettuce with Caesar dressing. Top with crispy chicken, extra Parmesan, and croutons if using.
5. Finish: Squeeze over fresh lemon and crack some black pepper on top.
