The Ultimate Girl Dinner!

There’s just something about crunchy chicken on top of a cold, garlicky Caesar that never misses. It’s familiar, comforting, and feels a little indulgent while still being balanced. This is one of those recipes I come back to over and over when I want a dependable lunch or easy dinner that always hits.

Ingredients

Crispy Chicken Cutlets

2 chicken breasts, halved

2 cups Italian breadcrumbs

1 cup flour

¼ cup dried Parsley

2 eggs, beaten

1 tsp garlic powder

1 tsp onion powder

Salt & pepper

Frying oil, for pan

Salad

1–2 small heads romaine lettuce, chopped

¼ cup Homemade Caesar dressing

Extra Parmesan, shaved

Black Pepper

Croutons (optional)

Lemon wedges (optional)

Homemade Caesar Dressing

• ½ cup mayo

• 1 clove garlic, minced

• 2 anchovy fillets (or 1 tsp anchovy paste)

• 2 tsp Dijon mustard

• 2 tsp Worcestershire sauce

• 2 tbsp freshly squeezed lemon juice

• ¼ cup grated Parmesan

• Salt & pepper, to taste

Instructions

Make the Dressing

1. In a bowl, mash anchovies and garlic into a paste.

2. Whisk in mayo, Dijon, Worcestershire, lemon juice, and Parmesan.

3. Season with salt & pepper. Taste and adjust lemon or Parmesan as needed.

4. Keep chilled until ready to use.

Prepare the Chicken

Halve the chicken breast. Pound chicken to even thickness. Season with salt, pepper, garlic powder, and onion powder.

In 3 separate bowls, add the beaten eggs, breadcrumbs and parsley, and flour. Season your flour with salt, pepper, garlic powder, and onion powder.

Dip chicken into flour, then the beaten eggs, repeat. Then press into breadcrumbs mixed with Parsley.

Heat olive oil in a pan over medium heat to 350 degrees Fahrenheit. Cook chicken 3–4 minutes per side until golden and crispy.

Let rest 5 minutes, then slice.

Assemble the Salad

1. Toss romaine with Caesar dressing.

2. Top with crispy chicken, extra Parmesan, and croutons if using.

3. Finish with fresh lemon and cracked black pepper.
