Here’s another section of this vintage cookbook. This time on Salad dressings. I have never heard of some of these dressings. I do love the fact they used eggs as thickeners in a lot of the older dressing recipes instead of flour or cornstarch. They do still have some here that thicken

Occasionally we get a fairy egg, which is an egg that’s as small or smaller than a quails egg, but laid by a large hen. it’s simply a misfire in egg formation that happens from time to time. Some fairy eggs will have no yolk and others will have a yolk. We don’t see fairy eggs very often.
