How to make pine needle soda
Pine needle soda is a quick fermented drink you can make at home with edible conifer needles, honey, and water. To keep it safe: ID the tree (never yew), ferment only 2–3 days, and burp the bottle so pressure doesn’t build.
Rinse needles; add 2 tbsp honey; fill with filtered water.
Leave 1–2” headspace; ferment 2–3d; burp daily; chill.
Open slowly; discard if mold or rotten smell.
Taxus (yew) — highly toxic; don’t risk it.
Burping — vent pressure; prevents bottle explosions

Who should NOT: anyone unsure on tree ID.
