🌯 healthy Greek chicken gyros(easy dinner idea)😋

Hey Lemon8 foodies! 🌟 Today, I’m excited to share my absolute favorite recipe for Chicken Gyros, featuring my go-to pita bread from Sprouts and a creamy homemade tzatziki sauce. (If you’re up to it, but also sharing a little secret of mine too!) 🤫 Be sure to check it out below! ⬇️

These gyros are not only delicious but also a healthy dinner idea that’s perfect for any night of the week! 😋

⬇️Ingredients for Chicken Marinade⬇️

2 pounds boneless skinless chicken breasts

2 tablespoons olive oil

2 tablespoons lemon juice

2 teaspoons smoked paprika (or regular)

2 teaspoons cumin

2 cloves garlic, minced

1 teaspoon ground turmeric

1 teaspoon ground coriander

1 teaspoon Kosher salt (or garlic salt, if you just love garlic like me) 🙃

1/4 teaspoon freshly ground black pepper

1/4 teaspoon onion powder

1/4 teaspoon ground cinnamon

1/8 teaspoon crushed red pepper flakes (or more, to taste)

⬇️Tzatziki Sauce⬇️

1 cup plain Greek yogurt

2 cloves garlic, minced

1/2 teaspoon dried dill

1 teaspoon garlic powder

2 teaspoons lemon juice

Salt and freshly ground black pepper, to taste

1 small piece of English cucumber, peeled and finely diced

⬇️For Serving⬇️

6 pita or flatbreads (my favorite from Sprouts are pictured!)

1 romaine or iceberg lettuce, chopped

1 cup cherry tomatoes, halved

1/2 of a red onion, thinly sliced

1/2 of an English cucumber, thinly sliced

1 cup fresh spinach (because I’m Greek and love spinach!)

I typically will place the tomatoes, onions, feta cheese and cucumbers in a bowl and mix them together with olive oil and some garlic powder and tad bit of black pepper.

⬇️Instructions⬇️

Marinate the Chicken. Combine all marinade ingredients and pour over the chicken breasts. Stir well to coat and let it marinate for 1-4 hours.

Prepare the Tzatziki Sauce: Mix all the tzatziki ingredients together. Taste and adjust with more lemon juice, garlic, salt, pepper, or cumin if needed. Refrigerate until ready to use.

Grill the Chicken. Heat the grill to medium and oil the grates. Remove the chicken from the marinade and let any excess sauce drip off. Grill the chicken for a few minutes on each side until cooked through. Remove and let rest before slicing into bite-sized pieces.

Assemble the Gyros. Toast or warm your pita bread. Layer with chicken, lettuce, tomatoes, red onion, cucumber, spinach, and a generous dollop of tzatziki sauce. Enjoy!
