🍋 Lemon Ginger Cookie Recipe:
• 1/2 cup softened butter
• 1/2 cup packed brown sugar
• 1 egg
• 1 Tbs lemon rind, grated fine
• 1 Tbs lemon juice
• 1 tsp powdered ginger
• 1/4 tsp salt
• 2 cups flour (scoop from bag)
• Thoroughly cream the butter & brown sugar
• Stir in the egg, lemon rind and lemon juice
• Mix salt and ginger into flour, then stir into butter & sugar.
• Knead.
• Roll dough into 2" balls and place on cookie sheet.
• Stamp (or flatten with a cup) and bake at 350° for about 10 minutes
