It’s fig season here in Texas 🍃 and thanks to a generous neighbor who let us pick from their abundant tree, we’ve been busy in the kitchen!
We dehydrated enough figs to fill 4 jars for snacking and winter baking, and we canned 14 jars of the most delicious spiced fig jam — filled with warm notes of orange zest, vanilla, cardamom, cinnamon, and nutmeg. 🌿✨
Here’s how we made both:
🍬 Dehydrated Figs (simple & delicious):
1. Wash figs and remove stems.
2. Slice in half or quarters, depending on size.
3. Place on dehydrator trays (cut side up) or baking sheets if using an oven.
4. Dehydrator: Set to 135°F for 12–15 hours.
Oven: Bake at the lowest setting with the door cracked open for 6–8 hours, flipping halfway through.
5. Store in airtight jars or freeze for long-term storage.
🍊 Spiced Fig Jam Recipe (makes ~7 half-pint jars):
Double batch = 14 jars for us!
8 cups chopped fresh figs
1/4 cup lemon juice
2 Tbsp orange zest
1 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cardamom
4 cups sugar (adjust to taste)
1 box (1.75 oz) fruit pectin (like Sure-Jell)
1. In a large pot, combine figs, juice, zest, lemon juice, spices, and pectin.
2. Bring to a boil over medium heat, stirring constantly.
3. Add sugar and bring to a rolling boil for 1–2 minutes.
4. Ladle into sterilized jars, leaving 1/4” headspace.
5. Wipe rims, apply lids, and process in a boiling water bath for 10 minutes.
6. Let cool for 24 hours. Store in pantry or gift to a friend. 💛
