Look at These Cups of Sunshine!

I used to treat myself to the egg bites at Sam's Club because they are so delicious. I had all the stuff to make them, including a HUGE tub of spinach. I'm so glad I tried it because these are AMAZING.

Peppers, spinach, milk came from the food bank. Mozzarella is crystal farms from Walmart - we always have cheese. The eggs were from Kwik Trip because they're on sale right now for $3.99 (never did I think I'd be excited that eggs were "cheap" / on sale for $3.99). It wasn't long ago they were .33c to .50c. Those were the days.
