Easy dinner in an hour

Recipient for Steak Arugula Salad 🥗

Ingredients:

Flank steak (carne seasoning and lime)

Baby broccoli

Arugula (mine was pre washed)

Organic baby potatoes (sliced them in 4s)

baby bell mushrooms (sliced or buy pre sliced)

Bread (on side optional. Got mine fresh at farmers market)

Sweet corn (grill with old bay seasoning)

Pearl size mozzarella balls

Detailed Steps:

I first season with either butter or oil my sweet corn with old bay seasoning. Takes longer to grill corn 🌽

In the meantime, heat oven to 375F and add the potatoes diced on one sheet and broccoli on another sheet. Drizzle and toss in (olive oil, paprika, garlic, onion, and salt). I find broccoli finishes faster in 20 minutes while potatoes 35-45 minutes. Flip both in between the oven. Otherwise, you can always find ways to grill them too.

In a mixing bowl I combined the arugula, mozzarella, and cooked sliced mushrooms (mine are Portabella) normally medium-high heat is 7 minutes. Once corn is all grilled (mine took 35-40 minutes) then slice it off the cob and add to bowl with other ingredients. Give it a good mix.

Salad Dressing: I would find like a honey chipotle vinaigrette amazing to pair otherwise I did simple: salt, olive oil, 2x small limes was good but definitely wanted more tangy of a flavor.

My flank steak was pre seasoned lime and carne seasoning. Grilling took about 25-27 minutes but that’s for on the rare side. If you want to cook it for medium then 35-40 minutes seem to do the trick for a thicker slice of meet. Paired well with A1 sauce to dip with not just the meat but the veggies too.
