Make this rolls and you will never regret it. They are so perfect, crunchy outside, but so flavorful, soft and heavenly. It just melts in the mouth and you will want some extra.
🔘Ingredients:
250g ricotta cheese
170g spinach (boiled in water and drained)
50g marble cheese
50g Parmesan cheese
100g jalapeño cheese
1tsp garlic powder
1tsp onion powder
1 bunch green onions(diced)
Salt/pepper
2 eggs(1 egg for egg wash)
1 sheet puff pastry
Sesame seeds (optional)
🔘Prep and Baking process:
Take pastry out of freezer. In a large bowl add ricotta cheese, spinach, green onions, add cheeses (marble, jalapeño and Parmesan), egg, garlic and onion powder. Season with salt and pepper and mix everything well together.
Place pastry on work surface and cut in half to create 2 rectangles like on the video (mine was a little off🙂)
Divide filling between pastries, brush edge with egg then roll up, finishing with the seam side down.
Refrigerate for 20 minutes. Meanwhile, preheat oven to 180C/350F.
Cut rolls into 5 or 6 pieces, or whatever size you want. Brush tops with egg then sprinkle with sesame seeds (I used regular and black sesame seeds).
Bake for 35 minutes in the middle rack or until it is golden.
Serve warm and Enjoy ♥️

Spinach and ricotta rolls are a delightful appetizer or snack that bring together creamy cheese filling and flaky pastry for a perfect balance of textures and flavors. This recipe combines ricotta cheese, known for its smooth and mild taste, with nutrient-rich spinach, a great source of vitamins A, C, and K, and minerals like iron and calcium. Adding multiple cheese varieties such as marble, jalapeño, and Parmesan enhances the complexity and depth of flavor. Marble cheese provides a creamy texture, jalapeño cheese introduces a gentle spicy kick, and Parmesan adds a sharp, nutty finish. The use of garlic and onion powder elevates the aromatic profile, making each bite flavorful and satisfying. Puff pastry is an excellent choice for this dish due to its light, flaky nature when baked, creating a crunchy exterior to complement the soft filling. Allowing the rolled pastries to chill in the refrigerator before baking helps maintain their shape and ensures even cooking. Brushing with egg wash and sprinkling sesame seeds on top not only adds a golden color but also an appealing visual and slight nutty taste. These rolls are versatile and perfect for many occasions — from casual family gatherings to elegant parties. They can be enjoyed warm as a savory snack or a side dish. For a varied experience, try serving them with complementary dips such as garlic aioli, marinara, or a fresh herb yogurt sauce. For those looking to customize, consider incorporating fresh herbs like basil or dill into the filling for an added layer of fragrance and flavor. Additionally, swapping out cheeses or adding sautéed mushrooms or sun-dried tomatoes can create exciting variations. When preparing spinach for the filling, thoroughly boiling and draining is essential to remove excess water, which prevents sogginess in the pastry. This technique contributes to maintaining the ideal texture balance. In conclusion, spinach and ricotta rolls are a delightful, nutritious, and easy-to-make recipe ideal for satisfying a wide range of palates. Their combination of creamy cheese, healthy greens, and flaky pastry makes them a memorable treat suitable for any food enthusiast seeking a quick and delicious homemade appetizer.
