The coziest veggie filled soup

High Protein Minestrone Soup

1 tbsp olive oil

1 tbsp butter

1/2 white onion, chopped

3 medium carrots, chopped

3 stalks celery, chopped

1 lb lean ground turkey

2 tsp italian seasoning

4-6 cloves minced garlic

1 small zucchini chopped

2 tbsp tomato paste

1 15 oz can fire roasted tomatoes

8 oz tomato sauce

6 cups chicken broth, plus more if needed (use bone broth for more protein)

2 tsp basil

1 1/2 tsp oregano

1 tsp salt

1/2 tsp dried thyme

1/2 tsp black pepper

1 15 oz can kidney beans rinsed and drained

1 15 oz can cannellini beans rinsed and drained

Parmesan rind

1 cup short cut pasta of choice

2-3 handfuls of spinach

2 tbsp chopped fresh parsley

Fresh grated parm and red pepper flakes for serving

Heat butter and olive oil over medium heat. Saute onion, carrot, celery for 5-7 minutes. Add turkey, garlic and Italian seasoning and cook until turkey is browned. Add zucchini and tomato paste and cook a few more minutes. Stir in tomatoes, tomato sauce, beans, seasonings and broth and Parmesan rind. Simmer for 20 minutes. Stir in pasta and cook about 8 more minutes or until al dente. Stir in spinach and parsley. Let spinach wilt and enjoy topped with parmesan and red pepper flakes.
