Easy Smothered Chicken Thighs Recipe

One of my easiest, quickest and most flavorful meals I make when I’m craving something warm or when I don’t have the time or energy.

Recipe

Pre Heat Oven to 400F

Ingredients

4-6 Skin On Chicken Thighs

Onion powder

Garlic Powder

Smoked Paprika

Oregano

Black Pepper

White Pepper (optional)

Kosher Salt

Parsley

Butter

Heavy Cream

Parmesan Cheese

Potatoes

Veggies of your choice but I love green beans

Wash, peel and cut potatoes into cubs and boil. Once fork tender add butter, heavy cream and combine until smooth. Mix in Parmesan cheese then salt and white pepper to taste.

Season both sides of 4-6 chicken thighs with the above then cool in a deep cast iron. With one stick if butter on medium heat for about 5 minutes each side or when you have a nice char.

Season both sides of 4-6 chicken thighs with the above then cool in a deep cast iron. With one stick if butter on medium heat for about 5 minutes each side. Or until you hsve a slight char.

Placd thighs in a dish and bake uncovered for

15-20 minutes.

While chicken is baking, turn the skillet down to low medium heat. Add about 1-2 cups if heavy cream. Whisk and ad same seasonings above BESIDES salt to the gravy to your liking. Turn down to low and about tablespoon of cornstarch abd whisk until the thickness you like.

Plate your chicken and cover with your gravy and veggies!

The rich, savory gravy from the chicken just soaks into the grits beautifully, creating this incredibly satisfying bite. It feels a bit more indulgent, yet it's still super simple to pull off, keeping that 'quick and easy' promise alive. Here’s how I whip up a batch of perfect creamy grits to go with my smothered chicken thighs: Ingredients for Creamy Grits: 1 cup quick-cooking grits (or stone-ground if you have more time, just adjust cooking time) 4 cups liquid (I usually use 2 cups chicken broth and 2 cups water for extra flavor, or just milk for extra creaminess) 1/2 teaspoon salt (or to taste) 2 tablespoons unsalted butter 1/4 cup grated Parmesan cheese (optional, but highly recommended, especially since we use it in the potatoes for the original recipe!) A splash of heavy cream (if you want them extra decadent) Instructions: In a medium saucepan, bring your liquid (chicken broth, water, or milk) and salt to a boil over medium-high heat. Once boiling, slowly whisk in the grits in a steady stream to prevent lumps. Reduce the heat to low, cover, and simmer, stirring occasionally, until the grits are thick and creamy.
