A week of kid’s lunches! 🍽️

So this week was a mix of cooking, eating out, and being busy as heck some days. I have a lot to learn, but I try to listen to my kids about what they WANT to eat and give them that. I add extra things to their main want to make it a more balanced meal so they get all the nutrition that need to grow big & strong.

My daughter is diabetic so we’ve been experimenting with new foods, and anyone with kids knows that can be difficult. She has been requesting so many sandwiches because it’s a safe option that isn’t much change from the norm. I am very thankful because neither of my kids are TOO picky so they will try anything I give them.

I've found a few tricks that really help me stay on top of things, even with my daughter's type 1 diabetes to consider. For those school days, having a few go-to packable ideas is a lifesaver. I often rely on making a big batch of egg salad on Sunday, which means fresh egg salad sandwiches are ready to go for a couple of days. Paired with some string cheese and turkey bacon (my kids love tearing it up!), it feels like a complete meal without much fuss in the morning. These are fantastic for quick assembly on busy mornings. Managing the sugar content, especially with type 1 diabetes, has been a huge learning curve for our family. I'm always on the lookout for tasty, low-sugar alternatives that still feel like a treat. For example, those zero sugar chocolate almond milk boxes and zero sugar chocolate pudding cups have been fantastic finds! They feel like a special dessert but help us stay on track with her carbohydrate goals. When it comes to snacks, baked goldfish are a staple – surprisingly satisfying and great for a savory crunch. I've even experimented with making my own zero sugar chocolate chip cookies at home, which are always a big hit. It’s all about finding those small, thoughtful swaps that make a big difference in managing blood sugar without feeling restrictive or boring for the kids. Even though my kids aren't super picky, I know that's a common challenge for so many parents. My approach is to always offer variety and involve them in the choices when possible. Sometimes it’s as simple as asking, 'Do you want Spider-Man spaghetti-os or Paw Patrol Mac & cheese today?' and then I’ll make sure to add in some protein like turkey pepperonis or a side of colorful veggie sticks. Giving them a sense of ownership, even over small decisions, makes them more likely to eat what's packed. And let's be real, some days call for the ultimate 'easy button' – like those Wendy's chicken nugget kids meals after a long doctor's appointment. It's about finding that balance between homemade goodness and the convenience life sometimes demands. To make things even easier, I try to implement a bit of meal prepping on the weekends. This could mean chopping up fruits and veggies, portioning out snacks, or even cooking a larger batch of chicken or pasta that can be repurposed throughout the week. Don't underestimate the power of a good thermos for keeping warm meals, like leftover soup or pasta, hot until lunchtime. Also, presentation can make a huge difference – using fun bento boxes or cookie cutters for a simple peanut butter & jelly sandwich can turn an ordinary lunch into something exciting. And remember, hydration is key! Always include a water bottle alongside their meal. It’s a journey, and every week is a new learning experience in keeping my little ones fed, happy, and healthy!
