Makes 12 Clams Casino
INGREDIENTS:
6 Little neck clams
1/2 cup plain breadcrumbs
1/4 red bell pepper cut fine.
2 tbsp. fresh chopped parsley
1/4 fresh lemon
1/4 grated Parmigiano Reggiano cheese
1/3 cup Pinot Grigio
5 tablespoons butter (3 for stuffing - 2 for topping clams)
2 tablespoons fresh minced garlic
6 pieces of maple flavored bacon
Cracked black pepper (to taste)
Paprika (to taste)
DIRECTIONS:
Start by washing your clams. Scrub the exterior then add them into cold water and salt which will remove
the exterior and interior sand.
Rinse and dry.
Add them into a preheated 400 degree oven for approximately 4 minutes until they open up and set aside
to cool.
Next, cook up the bacon when crispy set aside.
In a bowl add the breadcrumbs, butter, wine, garlic, peppers, parsley, cheese, lemon juice, pepper and
paprika.
Mix well.
Now get a butter knife and open the clams preserving each side of the shell. Drain the juice into the
stuffing mixture and remove the clam and belly.
Chop them up and add them into the mix.
Now add 3 strips of bacon chopped into the mix.
Mix well and fill each shell with the mixture.
When stuffed, top each clam with a piece of bacon and a pat of butter.
Broil for a couple of minutes until the top is crispy.
