🐚 Steamed Clams with Garlic, Lemon & Parsley

Ingredients:
2 lbs (900g) fresh clams (Manila or littleneck), scrubbed and rinsed
2 tbsp olive oil
4 cloves garlic, thinly sliced
½ tsp red pepper flakes (optional, for heat)
½ cup dry white wine (like Sauvignon Blanc)
Juice of 1 lemon (plus extra wedges for serving)
Zest of ½ lemon
¼ cup fresh parsley, finely chopped
Salt and black pepper to taste
Crusty bread, for serving
Instructions:
Clean the clams:
Scrub the clams under cold water. Discard any that are cracked or don’t close when tapped.
Sauté aromatics:
In a large skillet or pot with a lid, heat the olive oil over medium heat. Add garlic and red pepper flakes, sauté until fragrant (about 1–2 minutes), but don’t let the garlic brown.
Steam the clams:
Add the white wine and bring it to a simmer. Add clams, cover with a lid, and cook for about 5–7 minutes, shaking the pan occasionally, until clams open. Discard any that stay closed.
Finish with flavor:
Squeeze in lemon juice, sprinkle lemon zest and chopped parsley over the top. Season with salt and pepper to taste.
Serve:
Transfer to a serving bowl with the cooking broth. Serve immediately with crusty bread to soak up the juices.
📝 Tips:
Add a splash of cream for a richer broth.
For a heartier meal, toss the clams and broth with cooked pasta or serve over steamed rice.
