The Haidilao Tomato Flavour Hot Pot Sauce is a real game-changer—it has a rich, concentrated tomato taste that makes the broth deeply flavorful without needing many additional seasonings.
I love how versatile this dish is. You can throw in any vegetables you have on hand—baby corn, shiitake mushrooms, and carrots work great because they add texture and sweetness as they simmer. Adding tofu and leafy greens like romaine lettuce adds freshness and balance to the hearty broth. The shrimp paste is my secret ingredient; squeezing it in gives a subtle seafood umami boost that complements the tomato base perfectly.
For protein, sliced pork belly is ideal because it cooks quickly and becomes tender, but you can swap it out for chicken, beef, or even plant-based proteins depending on your preference. The best part is that the hotpot is ready in under 30 minutes, which is perfect for those zero brain meal moments when you want something satisfying but don't want to spend ages cooking.
One tip I’ve found helpful is to boil the fresh tomatoes along with the hot pot base from the start. This enhances the natural tomato flavor in the soup and creates a slightly sweet and tangy broth. Adding the vegetables in stages—hardier ones like carrots and corn first, then leafy greens and tofu last—ensures everything cooks to the right texture.
This easy tomato hotpot is not only comforting but also nutritious and a fantastic way to use up leftover vegetables in your fridge. Plus, the concentrated soup paste makes it flavorful without any hassle. If you’re like me and sometimes want a quick meal that feels like a treat, give this recipe a try—it might become your new favorite lazy day dinner!
